Beef with Broccoli

Beef with Broccoli" q0 K# u4 ~4 w( a/ w9 E* E
Serves 3 to 4

Ingredients:
% ?, W, }  W7 e* a- J7 H9 U9 Z3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
% N2 ^' X$ U7 d1 K  D! d+ ~1 ^$ G% B& Q% Q3 w% \
Marinade for Beef:

7 `8 G5 E4 `4 N. v! H) |. @) j1/3 tsp (1.5 mL) salt
% @! z; H) a$ T0 z' E1 Tbsp (15 mL) cooking wine5 W7 o5 F& x$ O6 k3 ?/ _! f
1 Tbsp (15 mL) cornstarch
0 m4 [2 L/ Y0 ^; l2 p2 Tbsp water4 b! l/ O: }5 y; ?0 t) T2 G2 A

' `" s* E$ m7 K' ?) A1 1/2 Tbsp (20 mL) oil
2 V  P5 _" a, x& ^0 f  i8 |& n
9 z3 f3 x3 z8 l' m3 N4 \+ S4 l1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices% c  {9 }1 p0 o+ C& y7 J
1 cup (250 mL) cooking oil0 \: {; q4 z: |8 Y' G
2 1/2 Tbsp (30 mL) oyster sauce) R/ T: l" D3 p  t3 n3 v
2 Tbsp (25 mL) light soy sauce
- w# J& c, b& D# B2 R! Z8 G3/4 Tbsp (10 mL) dark soy sauce
3 ?& H: W; ?# j1 Tbsp (15 mL) sugar, l: q3 r% t. {* }% _4 E' z
a few drops of sesame oil% i: L& A: Q4 V
2 cloves garlic, crushed
/ t4 ^2 m6 X4 {* z+ @1/2 cup (125 mL) chicken broth
; a; n* N# u1 H$ d) b2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 E% m5 `  d) _$ C
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 Z) ^2 u3 u2 h: R; LAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  # V+ w+ N( H/ k
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ F8 ?- W+ d, V- V

6 ?: K* P! N/ ~, c# L- K*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
