Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# ~' Q: _* |- I, T9 ^; F4 P

+ H. Y" U9 Y# C2 ?1 egg + M5 S4 u: w  s: P6 [- ~
1/3 tsp (1.5 mL) salt
+ Y, ]+ b6 t7 u9 v- @1 Tbsp (15 mL) cooking wine
. \$ `8 j1 t+ `, m8 I# A# h1 Tbsp (15 mL) cornstarch
* D+ f% t5 m/ |, w0 U  Z) {2 Tbsp water
- R0 e( \2 f- _9 N7 `3 W/ S' r
- _( J2 ?$ T8 s# [4 L3 x$ R1 1/2 Tbsp (20 mL) oil4 ~1 `, Y% t/ W; L4 u
# z6 U" U; t+ X+ k
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 l5 I; K! ~  s1 cup (250 mL) cooking oil; i' x8 @6 n% t9 e
2 1/2 Tbsp (30 mL) oyster sauce7 K  E* B1 \* a
2 Tbsp (25 mL) light soy sauce* N( I+ r: i, [$ ^' W2 o- M' {
3/4 Tbsp (10 mL) dark soy sauce
% p! W; ^6 _( `7 a  v1 Tbsp (15 mL) sugar5 [) Q0 \  j  {- s
a few drops of sesame oil8 Z9 A5 |  h) U% Y7 T; r
2 cloves garlic, crushed
8 r$ ~% m1 o% w1/2 cup (125 mL) chicken broth! R1 x5 x: Y8 {" R8 y+ A; C1 |) K
2 Tbsp cornstarch (if desired)
  W2 O" n" l4 N, k( a. B- z: Z/ p9 ?
) G8 S" W# r4 e6 BDirections:
# \& P: [, C6 V- F! @3 [2 aSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) q5 |0 g$ {- O; k
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& c# z8 p+ F& M- \2 s, A- P% m! d  \Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
" ^2 w1 ^6 `8 P5 H, C9 JHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.& b6 x, V% D9 c: Z

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
