• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)) k! ^* y7 z6 H7 \) _' p o9 f
• 1 1/2 teaspoons baking powder ! ?% F* o) P7 I* i$ \1 D7 J U
• 4 eggs, well beaten

8 ~) n) N, n: s0 PBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. " ^, o: S0 i; O% ~$ K$ g7 R* `
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
+ E* _' g6 S% I8 aBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.2 P% y$ ?8 c! [" k3 u+ h" }& D

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
