烤蛋糕

• 1/2 cup butter

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
# B! M5 j- w0 h6 }0 B5 g• 1 1/2 cups sifted flour or all purpose flour (former is better)" O! M, D B/ |6 S& K2 q! ]' ?
• 1 1/2 teaspoons baking powder / ~+ O2 g" h- F1 ^) m- v8 B" d
• 4 eggs, well beaten" S1 g4 z8 a& w7 D3 u" P' H$ h

PREPARATION:
5 F$ C. t1 q$ N$ c1 `, \2 s4 LBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
& V* v0 A$ Y4 ^) g7 P, TTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
( D6 o: w2 K5 c% c. y8 r* b4 J' GBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.% L( q' V! Q; o/ w. l# ^

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。# b- i2 I- u3 u4 x( u) W
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
