烤蛋糕

• 1/2 cup butter
/ ~; b+ x) e* L0 m5 s% P• 1 cup sugar
5 E6 C* y; d0 G% f' i• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
C* S1 {9 Q8 d9 p• 1 1/2 cups sifted flour or all purpose flour (former is better)
7 K0 i4 O, t9 c0 G' L• 1 1/2 teaspoons baking powder
3 H! j, G% a% j% I) y% }! d( O• 4 eggs, well beaten

PREPARATION:
8 W/ I& v: k+ ?7 e' M% Y; [, ?Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
: n/ ?$ u. s" J- `! S- uTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
4 Z9 o2 u2 H0 k. | o EBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

" }8 r; H7 |; D这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
r& F4 }6 q; l# U9 X5 x% v5 ubeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
