烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
4 @0 h: r) U2 U- d3 H• 1 1/2 cups sifted flour or all purpose flour (former is better)
% @" {# m% `2 I6 K; |• 1 1/2 teaspoons baking powder
* m8 d& _9 d% W. D$ w- g$ S* @• 4 eggs, well beaten

PREPARATION:
& J; ]% T) ~/ {% W' j# }% T/ oBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 7 Y* {* q2 h7 Y1 t+ y' l5 d
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 2 A" y# p8 g' u, S
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。6 g8 ?% t) Q$ q+ O: ]+ w e( G
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。: i) Q# O! l! i+ h) [
