烤蛋糕

• 1/2 cup butter ( ^# s7 T9 w% ~1 I; Y8 s
• 1 cup sugar ( A. J, l- R" h7 w) P+ M- o4 T
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
# ^8 D0 W& R3 r; ^2 u% Z/ Q' b1 o* P• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 5 t) d7 ^ Z# u, ` F0 h' ~
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. . ?, ]( F9 _8 v) S/ u
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

1 Y; H9 w; E# K这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
& G* r. H" N' j8 }beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。* r6 }8 G) ~, v$ N9 f/ X- s
