Beef with Broccoli

Ingredients:' c" V. y  p6 h  v! }+ }. S- F
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ I- u: j7 p5 D7 T% o) O# W6 ]
  y6 l0 ]' ~! E1 ]8 A; r+ |Marinade for Beef:
- g! X6 p- j3 `7 O1 egg & M& e9 l2 |, E) h2 T/ t  L( B
1/3 tsp (1.5 mL) salt$ J) {1 d% N, Y9 I; h
1 Tbsp (15 mL) cooking wine
8 k- g7 X  H' `4 r* D! A1 Tbsp (15 mL) cornstarch
+ E$ k+ }9 T% f2 t; _1 h4 z+ `2 Tbsp water
: C& a1 S% E) n1 j8 h: U! E; B" E; ^
9 ]$ f/ e( a7 j/ [( `$ S* P6 h1 1/2 Tbsp (20 mL) oil
' u" {2 K7 t7 k7 u$ C
0 U" H5 n9 @( m6 l8 E1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
0 i% s( x+ d- C" E8 y) \: O1 cup (250 mL) cooking oil
: ?- _7 \1 Q/ `% Z: m2 1/2 Tbsp (30 mL) oyster sauce
# k" A* T* g$ D3 \9 h4 W% L2 Tbsp (25 mL) light soy sauce. p+ \. ?( B6 L- k* {6 A
3/4 Tbsp (10 mL) dark soy sauce" q7 f4 v* b3 i3 w9 r
1 Tbsp (15 mL) sugar
% _# @4 Y/ D% u7 Y2 W" ya few drops of sesame oil# `- o7 u* Z$ n& D' W, n
2 cloves garlic, crushed
, e5 g; j  [6 q" h, b" G1 |1/2 cup (125 mL) chicken broth
9 w. ?$ L* {0 B; }8 L+ ]' N2 Tbsp cornstarch (if desired)
- C% ]  @# m7 f' J8 p& p& [: y/ M* h- d; A* O; _
Directions:# f# W6 t" ^- F- D: E! t
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. % B. T. L8 U2 j% g8 w& R3 E
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& L/ t% Q/ V  Z! M7 b: j3 [Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 ^$ }, X- Y: _; |$ h
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
