Beef with Broccoli

Serves 3 to 46 f" w4 P7 _8 f# G

$ ^  Z! k6 }: H, [" x; [3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
3 U; l  N7 h5 q7 k$ ^. ^* x1 egg
$ O2 {# n0 W7 B1/3 tsp (1.5 mL) salt
& H! N/ a, S9 C& E+ H" O2 X1 Tbsp (15 mL) cooking wine1 h4 h6 m7 W; R. L9 h
1 Tbsp (15 mL) cornstarch  a& C- v. a1 s6 i# M$ }3 B% ?
2 Tbsp water
% l% a2 w& \1 m8 I" V: o: ^/ L# e6 B, B5 B* i5 }) X/ o
1 1/2 Tbsp (20 mL) oil2 v. O5 ^6 Z  I5 _, m

. n  \/ C" O, u0 k' T# Q1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices' I9 {) S, g0 n. Y1 F$ [; m
1 cup (250 mL) cooking oil$ |# d8 w* j' k3 d) R: l. f
2 1/2 Tbsp (30 mL) oyster sauce$ n8 v8 m% k$ X+ _% |$ O$ j
2 Tbsp (25 mL) light soy sauce
. m! X9 u+ B0 K2 @$ A3/4 Tbsp (10 mL) dark soy sauce# u, u( @3 g  q$ |" l5 r1 h9 I% D
1 Tbsp (15 mL) sugar
+ ]/ c: k+ D' M3 y% m/ Qa few drops of sesame oil
' t6 T5 e4 _. s& e& G! H2 cloves garlic, crushed
: [  d2 U( b9 r5 Z1/2 cup (125 mL) chicken broth2 X  q* [9 \! m! S) D0 D
2 Tbsp cornstarch (if desired)
& w+ ~! R" H/ U6 K& m6 F% a: x: n3 Z0 a4 d1 s& A7 J
Directions:
" r9 T) u7 `  w# m5 Q$ L2 BSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 ^; j- T7 I& H( }
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, L+ S0 }- `4 o, N2 SAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 V$ j6 B0 r; Z$ b  ^- e. ~! ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
