* 2 tbsp olive oil
$ ~1 ]- b& v7 R6 ~' r5 [ * 1 tbsp butter
: n0 e4 K7 P! ^* { * 2 cups sliced chanterelle mushrooms; y8 F3 ^0 o/ N+ E' {
* 1/3 cup diced roasted red pepper/ w. y" x) A+ v
* 1 cup fresh corn kernels& t' _- X; z) r: I4 C- |0 h. h5 u
* 1/2 cup water

* micro greens for garnish

Step 1 a8 r- M! ~3 `& s
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

6 X* r8 S: ]7 S( Y9 U9 oAdd 1 cup fresh corn kernels,
* Y4 o* B$ l1 i$ }% tand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.1 |" x# j- j6 H; F1 z6 s6 W
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
