This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.

* 2 big halibut steaks

* 1 tbsp butter4 a( O( H, W: {+ ^5 K7 X: P
* 2 cups sliced chanterelle mushrooms9 W. [2 V+ v% x% x- K7 }
* 1/3 cup diced roasted red pepper
* O7 [% O0 N* t3 S- r% o * 1 cup fresh corn kernels) L' |- ]& w3 u7 V- U& ]3 R/ L
* 1/2 cup water/ t! F) l! J' ^3 o' \6 h( F
* 1 lemon, juiced
0 w& Q2 j9 } H, g * salt and fresh ground black pepper

Instructions

( k3 W2 F8 S% n: G$ {, u( wSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2 - m3 L1 I' W t3 \% _
Add 1 cup fresh corn kernels,1 E3 p4 Q b' X
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. & A- d4 {4 _$ N
Step 3
4 V6 W9 B+ |; C- s7 bSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Step 4
7 X+ v3 D, r3 sTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.. X& Z+ d; ] A0 a7 ^2 P8 N- B, x% F
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
