* 2 big halibut steaks

* 1 tbsp butter" R1 r/ E4 ?' v' {
* 2 cups sliced chanterelle mushrooms
% E* u3 k% Z% f * 1/3 cup diced roasted red pepper

Instructions 1 {( ^& k6 I% r6 V
Step 1
+ u" A7 w9 n) p3 v# iSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. & Q: X' U+ P% G) }# x1 w( w' B

Add 1 cup fresh corn kernels,
- H: s; Y5 F( Y1 |8 b s; s; S: sand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 8 ^6 i6 v4 S' A
Step 3
( I/ A: D6 _& TSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side. ]6 D" u, w3 y7 z" A" v8 q( b

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.; U q& o/ p0 G+ L4 p3 A2 Z
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
