烤蛋糕
INGREDIENTS:

• 1 cup sugar * e. }* G: n: p/ {
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)4 Z H, J8 }" ]" K7 w
• 1 1/2 cups sifted flour or all purpose flour (former is better)
/ H$ u+ s, ~8 A8 {; R• 1 1/2 teaspoons baking powder
8 G- T, I* p7 {+ ]" b: [; ]• 4 eggs, well beaten

PREPARATION:# M" K9 p( n1 L* ~% y- F1 a
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
7 I4 o& O4 w& C" DTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
# G# t$ R- a% f9 f7 m6 fBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.& x. s/ x9 @2 f

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。$ [& k b2 C+ g# B. F2 j4 M6 _
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。9 ]7 n2 }7 I! Y2 V

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
