• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

• 4 eggs, well beaten2 Y& b# `8 @7 T1 w2 _
PREPARATION:, c4 j# s+ q3 \1 Z
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
! l$ E' a8 B [ T' s' \/ _8 a' U) r. cTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.. N; W. V6 D1 c/ i* q

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
